Welcome to our “Life of a Pumpkin” series – where we will be deconstructing pumpkins and cooking them up into pure deliciousness.

Part 1: Making Pumpkin Puree

Approx. 1 cup pumpkin puree

1/2 cup vegetable oil (canola is fine)

1 cup sugar

2 eggs

1-1/2 cups + 1 tablespoon flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground nutmeg


Preheat oven to 350 degrees F. Lightly grease and flour a 9×5 inch loaf pan.

In a large bowl, mix together the pumpkin, oil, sugar, and eggs. In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg; stir into the pumpkin mixture until well blended, but don’t over-mix. Pour batter in loaf pan.

Bake for 45-55 minutes or until a toothpick comes out clean. Let cool for 15 minutes before removing from pan.
