If you read our “Life of a Pumpkin” series, you already know we are big fans of the pumpkin. Now, we’ve discovered this new spin on the pumpkin – an easy pumpkin ice cream recipe – and we love it!
Easy Pumpkin Ice Cream
Ingredients:
2 cups pumpkin puree
1 cup cream
2/3 cup half-and-half
2/3 cup sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon*
1/2 teaspoon ground ginger*
1/8 teaspoon freshley grated nutmeg*
1/8 teaspoon ground cloves*
1/8 teaspoon instant espresso (this is optional, but you can see where we’re going with this!)
Directions:
Combine all ingredients in a mixing bowl and whisk until smooth. Pour mixture in ice cream maker and use machine according to instructions. When mixture thickens, move to freezer container and freeze until desired consistency. Enjoy!
