Why We Might Want To Rethink ‘Gluten-Free’

Gastroenterologist Peter Gibson and his colleagues published a study in 2011 that outlined how many individuals likely have a non-celiac intolerance to gluten. Gibson has now published a new study saying that actually may not be the case, that people may actually be reacting to fructan, a non-digestible carbohydrate.
