Here’s a delicious fall recipe your whole family is sure to love: Pumpkin Spice Pancakes!
1 1/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
2 teaspoons pumpkin spice (recipe here)
1/2 teaspoon salt
1 cup low-fat milk (not skim)
6 tablespoons canned pumpkin puree
2 tablespoons melted butter
Mix together dry ingredients (flour, sugar, baking powder, salt and pumpkin spice). In a separate bowl, mix egg, milk, pumpkin puree and melted butter. Fold wet mixture into dry ingredients – do not overmix! Heat lightly greased skillet to medium heat and pour desired sized pancakes. When tops bubble, flip and continue cooking for a few more minutes. Serve hot with butter and syrup.
